CELLARING & DECANTING

Approachable upon releases. Cellaring 5-8 years will reward with a slightly developed bottle bouquet. Can age 25+ years.

Once you are ready to savor the wine, we highly suggest decanting.

Decant young wines for 1 hour and add 1 hour of decanting for every 10 years of age. You can speed decanting wine by pouring the wine once or twice between two decanters (or between the decanter and the wine bottle with a funnel). If you don’t have a decanter, swirl your wine in the glass. The swirling increases the surface area of wine exposed to oxygen and aerates it just as decanting would.

TASTING NOTES

2024 Septem Cabernet Sauvignon is a young Napa Valley Cabernet Sauvignon with a dark cherry-red color. At first, the wine has great aromas of eucalyptus, tarragon, sage, and then nice ripe aromas of chocolate-covered strawberries, red cherries, and cassis. On the palate, this wine has a short, soft approach, with nice silky young tannins that quickly build to a very well-focused yet structured mid-palate. The finish has good tension to it and a nice lingering dry freshness sensation, leaving you with explosive aromas of dark chocolate mocha, plum, and pomegranate, and a hint of black peppercorn.
